Going to – or saying you will go to – the gym is an activity for Mondays. This, on the other hand, is an activity for Sundays. Raid your storecupboard at once and pre-heat your oven. This recipe is delicious, indulgent and ultra simple, and is quite possibly the only thing in the world that can stave off the Sunday Night Blues.
350g hazelnut spread
1 cup plain flour
2 medium eggs, whisked
50-100g chopped mixed nuts
1 Pre-heat your oven to 180° fan. Roughly chop the nuts if you haven’t already done so. See what else is in the storecupboard too – I threw in about 6 chopped glacé cherries because they can only improve things. Combine all of your ingredients into a mixing bowl.
2 Lick the spoon.
3 Line a 6 x 6″ tin with baking paper. Screw the paper up tightly into a ball and smooth out again, before you squish it into the tin. Speed is your friend here, as there is an interminable 15-minute wait whilst the brownies actually cook.
4 Bake in a pre-heated oven for 15 minutes for a really gooey centre, or more like 20 for a firmer centre. Allow to cool for 5 minutes for you attempt to chop and eat. Serve with ice cream or whipped cream, or any other kind of cream you have lurking in the fridge. Enjoy, and don’t think about Mondays.
